Cacao, can it really make healthy chocolate?

The cacao bean is the most revered food in the rain forest. It is incredibly nutrient rich, containing 1,200 individual constituents. Ordinary chocolate is roasted, both ingredients are exposed to very high temperatures which damage important enzymes, change the profile of the plant fat and diminish the vitamin content dramatically.
