Sugar Cookies

Ingredients:
2 eggs
1 cup rice flour
1 cup cornstarch
1 cup sugar
1 cup Dairy free margarine
1/2 cup tapioca flour
 1 1/2 tsp xanthan gum
1 tsp baking powder
1 tsp vanilla

Cinnamon Sugar Topping

1/4 cup sugar
1 tsp cinnamon
1/2 tsp salt

Directions:
First, remember to preheat oven to 350F. Mix rice flour, cornstarch, tapioca flour, xanthan gum, baking powder and salt.

In a separate bowl beat sugar, dairy free margarine, eggs and vanilla.

Add flour mixture to egg mixture and beat thoroughly. A spoonful at a time, drip this onto a lightly greased baking sheet.

Sprinkle with cinnamon sugar mixture. Keep this baking for 10 minutes.
