Spicy Pork with Spaghetti

Ingredients
225g – 300g (8 – 10 oz) Pork Tenderloin
2 x 15mlsp (2 tbsp) olive oil
200g (7oz) Dietary Specials spaghetti
1 x 190g jar spicy pepper and tomato sauce (Sacla)
4 spring onions, chopped
Coriander or flat leaf parsley to garnish

Serves 2

Preparation time: 10mins   Cooking time: 10-15mins

Method
1. Cook Spaghetti as per instructions on the pack in a large pan of

    salted water with 1 tablespoon of the olive oil.  Stir occasionally

    while spaghetti is cooking.
2. Trim and discard any fat from the fillet and cut the meat into 2.5cm

    (1 inch) wide slices.
3. Heat the remaining olive oil in a large frying pan over a high heat,

    add the meat piece by piece and brown both sides of each piece

    for 2 –3 minutes add the spring onions and fry for a further 3 - 4

    minutes.
4. Add the spicy pepper sauce to the pan and heat through

    thoroughly.
5. Drain the pasta, place on serving plates, top with pork sauce and

    garnish with coriander or flat leaf parsley. Serve immediately.
