Parma Ham, Lemon and Asparagus Pasta Salad

Ingredients
250g (9oz) Dietary Specials Penne Pasta           
1 x 15mlsp (1 tbsp) fresh basil, chopped
115g (4oz) asparagus, cut into short lengths       
Salt and freshly ground black pepper
50g (2oz) frozen petits pois, defrosted       
115g (4oz) Parma ham, cut into strips
250ml (9fl oz)creme fraiche               
25g (1oz) Parmesan cheese, grated
½ x 5mlsp (½ tsp) lemon zest               
Basil leaves for garnish

Serves 3-4

Preparation time: 10 mins  Cooking time: 10mins

Method
1. Cook the penne in plenty of boiling, lightly salted water with a

    dash of olive oil for about 9 minutes. Drain and place in cold

    water.
2. At the same time cook the asparagus in a little lightly salted water

    for 4 - 5 minutes, drain and run through cold water.
3. Mix together the petits pois, crème fraiche, lemon zest, chopped

    basil and seasoning.
4. Drain pasta. Combine the asparagus, pasta and crème fraiche

    mixture together, and then add the Parma ham strips.
5. Sprinkle over Parmesan cheese and garnish with basil leaves.
