Yorkshire pudding
50g Gram flour (chickpea)
50g Rice flour
1 egg
sea salt & freshly ground black pepper
220ml of milk - your choice of cow’s, goat, sheep, soya, oat or chufa ‘milk’
2 tbsp of cold pressed sunflower oil
Heat oven to 190C/375F/Gas Mark 5. Pour the flours, egg and whatever milk you are using, with a pinch of salt and a grind of black pepper, in a food processor & whizz thoroughly.
Pour a couple of drops of sunflower oil into the bottom of 12 individual mince pie tins or one flat baking dish. Put in the oven for a couple of minutes to heat til the oil is smoking. Pour the batter into the individual holders or into the tin and return it to the oven at once. Bake for 20 mins or until the puddings are risen & golden.

At last after all this time, I can have yorkshire puddings with my roast beef. Go on give it a go.
